Viticulture:

Sourced from family owned vineyards in the Wairau & Waihopai Valleys. These vineyards have been responsible for making some of New Zealand's best sweet dessert style wines for the past decade. The fruit was fully botrytised thereby concentrating the sugar, acid & flavor enabling us to make a luscious sweet wine.

Winemaking:

The fruit was picked very late in the season when it was fully dehydrated, pressed several times then fined and clarified to yield lovely clear, green/gold juice. It was then fermented very slowly in a mix of old French oak barrels and stainless steel tanks until the acid & sugar were in balance. It was then matured for up to 2 years in barrels to allow the components to harmonise.

Tasting Notes:

A pleasant green/yellow in colour. The nose shows wonderfully complex aromas of yellow fruits, pineapple, citrus & quince with subtle nutty characters from the oak. The palate is rich, sweet & thick with balancing acidity ensuring a long, clean finish.

Cellaring:

This wine has been made to drink well from release so enjoy it while it´s young or for 3-4 years from release.

Food
Accompaniments:

The obvious choice would be dessert, try it with roast pineapple, lemon curd and crème fraiche or Tarte Tartin made from quince. Or you could be more inventive and enjoy it with some of our lovely washed rind cheese like Kapiti's Ramara or Milawa's Gold - heaven.
